{"id":11993,"date":"2021-01-04T04:12:18","date_gmt":"2021-01-04T11:12:18","guid":{"rendered":"https:\/\/melacey.com\/blog\/?p=11993"},"modified":"2021-01-04T04:12:18","modified_gmt":"2021-01-04T11:12:18","slug":"sd-sugar-wp","status":"publish","type":"post","link":"https:\/\/melacey.com\/blog\/carousel\/sd-sugar-wp\/","title":{"rendered":"Marlene\u2019s Sourdough, Sugar, Waffle Ice-Cream Pockets"},"content":{"rendered":"<h1>Ingredients<\/h1>\n<ul>\n<li>2 large eggs, separated<\/li>\n<li>1\/4 c white sugar<\/li>\n<li>1\/4 c brown sugar<\/li>\n<li>1 1\/2 tbsp whole milk (to thin batter, if required)<\/li>\n<li>1 1\/2 tbsp yogurt<\/li>\n<li>1\/2 tsp vanilla bean paste or extract,<\/li>\n<li>1 tsp pure almond extract<\/li>\n<li>1\/3 c (50 g) sourdough starter discard<\/li>\n<li>1\/4 tsp sea salt<\/li>\n<li>1\/3 c (50 g) all purpose flour, sifted<\/li>\n<li>1\/4 tsp ground cinnamon<\/li>\n<\/ul>\n<h2>Optional toppings<\/h2>\n<ul>\n<li>semisweet chocolate, melted<\/li>\n<li>chocolate nubs<\/li>\n<li>toasted nuts<\/li>\n<\/ul>\n<h1>Directions<\/h1>\n<p>Prepare batter using 3 bowls (dry ingredients\/egg whites\/seasoned wet ingredient).<\/p>\n<ol>\n<li><strong>Dry Ingredients<\/strong>: Mix flour and salt; set aside.<\/li>\n<li><strong>Egg Whites:<\/strong> Bring eggs to room temperature. Separate eggs. Whip the egg whites to form stiff peaks and gradually whip in white sugar. Set aside.<\/li>\n<li><strong>Seasoned Wet Ingredients<\/strong>: combine egg yolks, brown sugar, cinnamon, yogurt, vanilla, almond extract and sourdough starter discard.&nbsp;<\/li>\n<li>Gradually whisk the dry ingredients into the wet ingredients, until smooth. The batter should be thin; stir in milk, if needed.<\/li>\n<li>Fold in egg white and sugar whip.<\/li>\n<\/ol>\n<h2>Cook and Shape<\/h2>\n<ol>\n<li>Heat griddle using medium heat setting.<\/li>\n<li>Pour about 1\/4 cup of batter onto the skillet spreading the batter into a thin full circle.<\/li>\n<li>Cook until golden.<\/li>\n<li>Use a wooden chop stick and gently remove in quarters. While warm, pull apart the top layer from the bottom layer, creating pockets; cool on wire rack.<\/li>\n<li>Repeat with the remaining batter.<\/li>\n<li>When cool, top bottom layer with ice-cream and touch of flavouring and\/or toasted nuts (opt.).
