A real Cup/cake

Cocoa Cake in a Cup

(microwave at high power for 3 minutes)

Spray large mug with cooking spray. I’ve had a lot of success using Wilton’s baking spray and employing the Corning mug that handles the heat of the microwave.
Put following dry ingredients in a cup:

  • 2 tbsp whole wheat flour
  • 1 tbsp white flour
  •  3 tbsp sugar / Splenda
  • 2 tbsp cocoa
  • 2 tbsp powdered milk
  • 1 pinch of salt
  • 1 pinch of spice such as curry, corriander, cumin, chili powder

Add:

  • 1 egg
  • 4 tbsp water
  • 3 tbsp oil
  • few drops vanilla

Put dry ingredients in a zip lock bag; zip and shake it up. Here’s a zippy tune to shake to:

Add egg and stir well.

Add and stir in water, oil and vanilla.

Scrape the bottom of mug to avoid pockets of dry ingredients.

Microwave on high for 3 minutes.
