Sourdough Pasta

Ingredients

  • 1/4 c starter discard (fed or unfed)
  • 3/4 c flour 
  • 1 egg
  • 1/2 tsp salt

Instructions

  1. Add all ingredients into bowl of a stand mixer with a dough hook; mix on low a ball is formed. You may have to add water to create the right consistency to create the ball.

  2. Cover dough with plastic wrap; let dough rest for 30 minutes. 

  3. Prepare the noodles using one of the following methods: a.) Set and roll out dough on a floured surface, using a rolling pin to roll it as thin as possible. Cut to desired width.  b.) Using a pasta extruder, dip hands in olive oil and form small balls to place into the pasta extruder intake.

  4. Drop noodles into boiling water for 3-5 minutes. Drain and serve.
