Veggie Handpie

Richly spiced potato, pea, corn, carrot and cabbage filling wrapped in a tumeric-spiced pastry crust.

Filling

1 tbsp coconut oil/butter
1/2 c yellow onion, 1/4-inch-diced
1/8 tsp cinnamon
1/4 tsp allspice
1/2 tsp ground cumin
1/4 tsp red pepper flakes
1/8 tsp cayenne
Coarse sea salt
2 large cloves garlic, minced
3/4 c coconut milk
1/4 c carrots, 1/4-inch-diced
1/4 c yellow potatoes, 1/4-inch-diced
1/2 c green peas (fresh or frozen)
1/2 c sweet corn (fresh or frozen)
1/2 c cabbage, shredded
1 tbsp  thyme, minced
1 tbsp lemon juice, freshly squeezed
1/2 tsp ground white pepper

Pastry

1 3/4 c unbleached flour
1 c whole wheat pastry flour
2 tsp turmeric
1/2 tsp fine sea salt
3/4 c coconut oil, chilled
2 tsp apple cider vinegar
1/2 c + 2 tbsp ice water
