Pickled Red Onions

Scott Conant (Chopped judge) has an aversion to untamed raw onions. Use them, but do not simply chop them and place them on top of your dish. First soak them in ice water, salted water, or acidulated water for a long while. I keep a jar of pickled red onions in my refrigerator. 

Pickled Red Onions

  • 1 medium red onion, sliced thinly crosswise
  • 1/2 c red-wine vinegar
  • 1/2 c filtered water
  • 1 1/2 tsp coarse salt

Mix all ingredients together in a small, clear, mason jar. Cover with lid and refrigerate for at least 8 hours and up to 1 week.

Here, I acidulate diced raw red onion in red-wine/filtered-water before use in my shrimp gazpacho.

  1. Does this mean that Scott Conant is a judge of how different foods are chopped? I am going to try this. The water at our ranch is so good that our tap water is as good as filtered.

    1. Chopped is a cooking competition show on the Food Network channel where four chefs display their cooking prowess (skill, speed, and ingenuity). Scott often appears on Chopped. One of my favourite food experts, Scott often sits on the show’s four-judge panel, judging three competition rounds (appetizer, entrée, and dessert). Course by course, a basket of mystery ingredients is turned into a meal. Together, the four judges decide which chef from each round is chopped until one emerges as a winner earning the Chopped Champion title.
