Sourdough Waffles

Adapted from 2015, Breville the No-Mess Waffle Instruction Booklet – BWM520, “Yeast (Belgian-Style) Waffles,” p. 8; makes about 8 waffles.

Mix the batter the night before, to ferment overnight; next day, finish and cook.

Ingredients

    • 285 g (1 1/4 c) warm water
    • 4 tbsp milk powder or buttermilk powder
    • 230 g (1 c) yogurt
    • 113 g (1/2 c) butter, melted slightly
    • 100 g (1/2 c) sourdough starter discard, stirred down
    • 5 g (1 tbsp) sugar
    • 250 g (2 c) all purpose flour, or flour mix 
    • 2 eggs, separated
    • 5 g (1 tsp) sea salt
    • 3 g (1/2 t ) baking soda
    • 1 tsp vanilla bean or extract

Instructions

Preparing Batter and Waffle Iron

  1. Stir together 1 c of the water, powdered milk, yogurt, and butter in a large mixing bowl. Add starter and mix well. Top with sugar; whisk in flour, until fully incorporated.
  2. Mix well. Add enough of the remaining ¼ c water to get a consistency of batter that can pour slowly from a spoon.
  3. Cover bowl with plastic wrap and rest at room temperature overnight, 8–24 hours.
  4. Heat waffle iron, setting desired levels.
  5. Warm the eggs to room temperature. (Let them sit in a bowl of warm water.) Separate the two eggs into whites and yolks into two separate bowls.
    1. Whisk the egg whites until they form stiff peaks;
    2. Scramble egg yolks lightly and pour into rested batter. Put baking soda and salt on top of the batter. Add vanilla.
    3. Gently stir through until well blended.
  6. Fold eggs whites into the mixture until just incorporated.

Bake Waffle

  1. Scoop ½ c batter evenly on the center of the heated waffle plate. Close lid and cook until ready (cooked to your liking).
  2. Open lid and carefully remove waffle. I use a wooden chop stick to gently lift and remove the waffle to a serving platter.
  3. Repeat with remaining batter. For best results, add next scoop of batter, immediately after removing cooked waffle.

Waffles freeze well. Pull required number of waffles from the freezer and toast them: use the “defrost” option on your toaster setting, if your toaster has that option; toast on center rack of your toaster oven; or heat the frozen waffle, 25 seconds on high setting, then flip and repeat.
